processing:Cherries are hand sorted for unripes and overripes by the farmers before they go in to production. A 3 disc Agaarde pulping machine removes the skin and pulp. The coffees are graded by density into 3 grades by the pulper. Grade 1 and 2 go separately to fermentation. Grade 3 is considered low grade. The coffee is fermented for 24 to 36 hours under close shade. After fermentation the coffees are washed and again graded by density in washing channels. The coffees are then sundried for 12 to 20 days on raised African beds. Exact timing depends on weather conditions. Coffees are covered in plastic during midday and night.
notes: The Kamwangi factory is Rainforest Alliance certified and they have soaking pits installed for waste water treatment as well as good quality control systems for processing.
